Stars and Rice Paper

Last class I learned how to decorate a cake using rice paper and to create designs on cakes using the above technique of piping tons of tiny little stars.

If anyone is interested in trying this out for themselves. Here’s what we learned below.

This technique of using rice paper is recommended in conjunction with the use of piping gel. Makes me want to find some and see what it’s like.

Kopykake.com is an excellent site for finding all kinds of neat decorating tools. They offer a wide array of out-of-the-ordinary items like edible ink for your printer! Pretty cool.

  • Icing – an ideal frosting for this is a Crisco based icing (what we used in class) or a buttercream – for consistency’s sake but also for their superior ability to absorb a rich deep color.
  • Print out of desired image

  • Piping bags
  • #2 or #4 round tip, #16 star tip
  • Coupler (optional)
  • Colorants for icing
  • Rice paper
  • Scissors
  • Non-toxic marker or food coloring pen
  • Patience

  1. Trace design onto rough side of rice paper with marker/pen. In the above link “how to work with rice paper” it was suggested on the smooth side. Not sure which is best, but I figure that if you are working with piping gel use the smooth side, if working with icing then use the textured side.
  2. Cut out design around outer edges of rice paper like below.

  3. “Glue” cut out design onto the top of your cake using icing applied to back of rice paper.
  4. Trace over all lines with piping bag filled with black icing using round tip #4.
  5. Fill design with desired colors of icing using star tip #16. Make sure that your stars are piped close enough together so that your white paper does not show through.
