I made some mini red velvet cupcakes today. These really should be called mini red velvet bites. They are literally a pop in your mouth kind of deal. Yummy.
This Southern Red Velvet cake recipe is our stand by. I baked these little minis for 9-10 minutes. The frosting was from Toba Garrett’s The Well Decorated Cake. So far everything from Toba has turned out perfect!
When Hubby first saw these he remarked, “Would you like some cupcake with your frosting?” Somehow trying to insinuate that there was too much frosting??? I agree that sometimes this can be true, but in this case I have to disagree. This frosting is on the not so sweet but oh-so heavenly side – in my opinion. The cake and frosting compliment each other beautifully.
