I made some mini red velvet cupcakes today. These really should be called mini red velvet bites. They are literally a pop in your mouth kind of deal. Yummy.
This Southern Red Velvet cake recipe is our stand by. I baked these little minis for 9-10 minutes. The frosting was from Toba Garrett’s The Well Decorated Cake. So far everything from Toba has turned out perfect!
When Hubby first saw these he remarked, “Would you like some cupcake with your frosting?” Somehow trying to insinuate that there was too much frosting??? I agree that sometimes this can be true, but in this case I have to disagree. This frosting is on the not so sweet but oh-so heavenly side – in my opinion. 🙂 The cake and frosting compliment each other beautifully.
the frosting reminds me of the ice cream cones one gets at Dairy Queen…oh my…that’s a throw back. 🙂 They look lovely! Thanks for sharing the links!
The beauty of this bite of a cupcake is that you can eat that much frosting, lol. They look beautiful and if you were here I’d hire you to make some for Bear’s and J-jo’s upcoming birthday party (a small one).
